Description

Deliciously crispy potato latkes that bring warmth and nostalgia to any meal.


Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 onion, grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Place grated potatoes and onion into a clean kitchen towel and squeeze out excess moisture.
  2. In a bowl, combine the drained potatoes and onion with eggs, flour, salt, and pepper. Stir until well mixed.
  3. Heat a generous amount of oil in a frying pan over medium-high heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly with a spatula.
  5. Fry each latke until golden brown and crispy, about 3-4 minutes per side.
  6. Drain on paper towels and serve hot.

Notes

For variations, add garlic powder, chopped herbs, or use sweet potatoes. Serve with applesauce or sour cream.
