- 4 medium potatoes, peeled and grated
- 1 onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Place grated potatoes and onion into a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine the drained potatoes and onion with eggs, flour, salt, and pepper. Stir until well mixed.
- Heat a generous amount of oil in a frying pan over medium-high heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly with a spatula.
- Fry each latke until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels and serve hot.
Notes
For variations, add garlic powder, chopped herbs, or use sweet potatoes. Serve with applesauce or sour cream.
