Ingredients

  • 2 cups crispy rice cereal
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional: avocado slices

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese. Toss gently.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
