Description

Delicious crispy zucchini fritters, perfect for lunch, loaded with fresh herbs and Parmesan cheese.


Ingredients

  • 2 medium zucchinis, shredded and drained
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour (or gluten-free flour blend)
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs (dill, parsley, or chives), chopped
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for frying

Instructions

  1. Wash and shred the zucchini.
  2. Squeeze out the moisture.
  3. Combine the ingredients in a bowl.
  4. Heat the olive oil in a skillet.
  5. Fry the fritters until golden brown.
  6. Drain and serve warm.

Notes

Serve with Greek yogurt or a zesty dipping sauce. Store leftovers in an airtight container for up to 3 days.
