Ingredients

- 2 medium zucchinis, shredded and drained
- 2 large eggs, beaten
- 1/2 cup all-purpose flour (or gluten-free flour blend)
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (dill, parsley, or chives), chopped
- Salt, to taste
- Black pepper, to taste
- Olive oil, for frying
Instructions
- Wash and shred the zucchini.
- Squeeze out the moisture.
- Combine the ingredients in a bowl.
- Heat the olive oil in a skillet.
- Fry the fritters until golden brown.
- Drain and serve warm.
Notes
Serve with Greek yogurt or a zesty dipping sauce. Store leftovers in an airtight container for up to 3 days.
