Description

A rich and creamy potato soup made effortlessly in a crockpot, perfect for cozy autumn days.


Ingredients

Scale
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 1 cup cream or milk
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, green onions, bacon bits

Instructions

  1. Add diced potatoes, onion, carrots, and celery to the crockpot.
  2. Pour in the broth and season with salt and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
  4. Stir in the cream or milk before serving.

Notes

For a thicker soup, mash some of the potatoes against the side of the crockpot.
