- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable or chicken broth
- 1 cup cream or milk

Instructions
- Add diced potatoes, onion, carrots, and celery to the crockpot.
- Pour in the broth and season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
- Stir in the cream or milk before serving.

Notes
For a thicker soup, mash some of the potatoes against the side of the crockpot.
