Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme

  • ½ teaspoon fine sea salt (plus more for finishing)
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rinse the chickpeas under cool water in a colander.
  3. Dry the chickpeas thoroughly using a towel.
  4. Coat the chickpeas with olive oil in a mixing bowl.
  5. Mix the spices in a small bowl and sprinkle over the chickpeas.
  6. Season the chickpeas to ensure even coating with the spices.
  7. Arrange the chickpeas in a single layer on the baking sheet.
  8. Roast in the oven for 20-30 minutes, shaking halfway through.
