Description

A creamy almond cheesecake topped with mixed berries, perfect for gatherings or a cozy afternoon.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup almond flour
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. Beat the cream cheese and sugar together until smooth.
  4. Add the vanilla extract and mix well to ensure a delightful flavor throughout.
  5. Incorporate the eggs one at a time, mixing until just combined after each addition.
  6. Fold in the almond flour until fully incorporated.
  7. Pour the cream cheese mixture over the crust in the springform pan, smoothing the top.
  8. Bake for 45-50 minutes, or until the center is set and the edges are lightly golden.
  9. Let the cheesecake cool at room temperature, then transfer it to the refrigerator to chill for at least 4 hours (or overnight for best results).
  10. Serve topped with mixed berries.

Notes

For a different nutty flavor, substitute almond flour with pistachio flour. This cheesecake is also delicious with a drizzle of chocolate sauce or whipped cream.
