- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup almond flour
- 2 cups mixed berries (strawberries, blueberries, raspberries)
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- Beat the cream cheese and sugar together until smooth.
- Add the vanilla extract and mix well to ensure a delightful flavor throughout.
- Incorporate the eggs one at a time, mixing until just combined after each addition.
- Fold in the almond flour until fully incorporated.
- Pour the cream cheese mixture over the crust in the springform pan, smoothing the top.
- Bake for 45-50 minutes, or until the center is set and the edges are lightly golden.
- Let the cheesecake cool at room temperature, then transfer it to the refrigerator to chill for at least 4 hours (or overnight for best results).
- Serve topped with mixed berries.
Notes
For a different nutty flavor, substitute almond flour with pistachio flour. This cheesecake is also delicious with a drizzle of chocolate sauce or whipped cream.
