- 2 pounds potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup bread crumbs (optional, for topping)
- Additional cheese for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot of boiling salted water, cook the diced potatoes until tender, about 10-15 minutes. Drain and set aside.
- In a mixing bowl, combine the sour cream, shredded cheddar cheese, milk, melted butter, garlic powder, onion powder, salt, and pepper.
- Add the cooked potatoes to the cheesy mixture and gently fold until well combined.
- Transfer the mixture to a greased casserole dish, sprinkling with bread crumbs and additional cheese on top if desired.
- Bake in the preheated oven for about 25-30 minutes, or until the top is golden and bubbly.
- Let cool slightly before serving.
Notes
This casserole can be made a day ahead and stored in the refrigerator before baking. You may use sweet potatoes for a sweeter flavor or swap out the cheese for variations.
