Description
A delightful and visually striking dish featuring sunny-side-up eggs fried in vibrant green and red salsas.
Ingredients
Scale
- 2 eggs
- 1/2 cup green salsa
- 1/2 cup red salsa
- Corn tortillas
- Salt to taste
- Fresh cilantro (optional)
- Sour cream (optional)
Instructions
- In a skillet over medium heat, warm the green salsa until it’s just bubbling.
- In a separate skillet, heat the red salsa over medium heat, keeping an eye on it to prevent burning.
- Crack the eggs gently into the green salsa and fry them sunny-side-up, allowing the edges to crispen while the yolk remains sunny.
- In another pan or microwave, warm the corn tortillas until they’re pliable and fragrant.
- On a plate, place a tortilla, carefully enlacing the egg atop it, then drizzle the red salsa generously over the egg.
- Sprinkle salt to taste, and add fresh cilantro and a dollop of sour cream if desired. Serve immediately to enjoy the freshness!
Notes
For perfectly cooked sunny-side-up eggs, keep the heat moderate. Use store-bought salsa for convenience and feel free to mix up the salsas for different flavors.
