Description

Ingredients

  • 1/2 cup green salsa
  • 1/2 cup red salsa
  • Corn tortillas
  • Salt to taste
  • Fresh cilantro (optional)

Instructions

  1. In a skillet over medium heat, warm the green salsa until it’s just bubbling.
  2. In a separate skillet, heat the red salsa over medium heat, keeping an eye on it to prevent burning.
  3. Crack the eggs gently into the green salsa and fry them sunny-side-up, allowing the edges to crispen while the yolk remains sunny.
  4. In another pan or microwave, warm the corn tortillas until they’re pliable and fragrant.
  5. On a plate, place a tortilla, carefully enlacing the egg atop it, then drizzle the red salsa generously over the egg.
  6. Sprinkle salt to taste, and add fresh cilantro and a dollop of sour cream if desired. Serve immediately to enjoy the freshness!

Notes
