Description

Delicate crunch and subtle floral notes make these Earl Grey Shortbread Cookies a perfect treat for any afternoon tea.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 2 tablespoons loose Earl Grey tea leaves
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract to the mixture and mix well.
  4. Combine the all-purpose flour, salt, and Earl Grey tea leaves in a separate bowl.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Chill the dough by rolling it into a log, wrapping in plastic wrap, and refrigerating for about 30 minutes.
  7. Slice the chilled dough into 1/4-inch thick rounds and place on a baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Cool the cookies on the baking sheet before transferring to a wire rack.
  10. Serve with a steaming cup of tea or coffee.

Notes

For extra sweetness, roll the cookie slices in granulated sugar before baking. Store in an airtight container for up to a week.
