Description

A vibrant and flavorful chicken thigh roast marinated in zesty citrus and fresh thyme, perfect for celebrating Easter.


Ingredients

  • 4 chicken thighs
  • 2 oranges, juiced and zested
  • 1 lemon, juiced and zested
  • 4 sprigs of fresh thyme
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the orange juice, lemon juice, zest, minced garlic, fresh thyme leaves, salt, pepper, and olive oil to create a marinade.
  3. Place chicken thighs in a baking dish and pour the marinade over them, ensuring they’re well coated.
  4. Let the chicken marinate for at least 30 minutes.
  5. Roast in the preheated oven for 25-30 minutes or until cooked through.
  6. Serve hot, garnished with fresh thyme sprigs.
