Ingredients

- 1 cup rice
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, jalapeños
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add ground beef or turkey, cooking until browned. Drain excess fat.
- Stir in taco seasoning and follow package instructions.
- Add rice, black beans, corn, and salsa. Mix well.
- Cover and simmer until rice is cooked according to package instructions.
- Remove from heat and stir in shredded cheese until melted and bubbly.
- Season with salt and pepper to taste.
- Serve hot, topped with optional toppings like sour cream, green onions, and jalapeños.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Can also be frozen for up to a month.
