Description

A comforting, one-pan meal blending savory taco seasoning with rice, beans, and gooey cheese, perfect for busy nights.


Ingredients

Scale
  • 1 cup rice
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, jalapeños

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add ground beef or turkey, cooking until browned. Drain excess fat.
  3. Stir in taco seasoning and follow package instructions.
  4. Add rice, black beans, corn, and salsa. Mix well.
  5. Cover and simmer until rice is cooked according to package instructions.
  6. Remove from heat and stir in shredded cheese until melted and bubbly.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with optional toppings like sour cream, green onions, and jalapeños.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Can also be frozen for up to a month.
