Description

A quick and flavorful chicken stir-fry noodles dish, perfect for weeknight dinners or gatherings with friends.


Ingredients

  • 1/4 cup (60ml) low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon cornstarch (or arrowroot powder)
  • 12 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • Optional: 1/2 teaspoon sriracha or a pinch of red pepper flakes
  • 1 lb (450g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 tablespoon soy sauce (for marinating chicken)
  • 1 teaspoon cornstarch (for marinating chicken)
  • 810 oz (225-280g) dried stir-fry noodles
  • 1 tablespoon cooking oil
  • 1 medium onion, thinly sliced
  • 23 bell peppers, thinly sliced
  • 1 large carrot, julienned or thinly sliced
  • 1 head of broccoli, cut into small florets
  • Optional: 4-5 shiitake mushrooms, sliced
  • Optional Garnish: Toasted sesame seeds, chopped green onions, fresh cilantro leaves

Instructions

  1. Marinate the chicken – In a bowl, combine chicken slices with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Toss to coat well and set aside while you prepare the vegetables.
  2. Prepare the noodles – Cook the stir-fry noodles according to the package instructions, then drain and rinse under cold water.
  3. Whisk the sauce together – In a small bowl, mix together the low-sodium soy sauce, hoisin sauce, rice vinegar, honey (or brown sugar), sesame oil, and cornstarch.
  4. Heat the oil – Heat a tablespoon of cooking oil in a large pan or wok over high heat.
  5. Sauté aromatics – Add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  6. Cook the chicken – Add the marinated chicken to the pan. Sear for about 2 minutes, then stir-fry until cooked through, about 3-4 minutes.
  7. Add the vegetables – Toss in the sliced onions, bell peppers, carrot, and broccoli. Stir-fry for another 3-4 minutes.
  8. Combine with noodles – Add the cooked noodles into the pan, followed by the prepared sauce. Toss to combine.
  9. Heat through – Stir-fry for an additional 2-3 minutes to thicken the sauce.
  10. Serve and garnish – Transfer to plates or bowls, then garnish with sesame seeds, green onions, and cilantro.

Notes

Feel free to use leftover vegetables or proteins. Adjust the heat by adding more sriracha if desired.
