- 4 fish fillets (cod, tilapia, or your choice)
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 3 cloves garlic, minced
- 2 tablespoons chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup flour
- 2 eggs, beaten
- Olive oil for frying
Instructions
- In a bowl, mix together the Parmesan cheese, breadcrumbs, minced garlic, parsley, salt, and pepper.
- Set up a dredging station with bowls for flour, beaten eggs, and the breadcrumb mixture.
- Pat the fish fillets dry, then dredge each in flour, dip in egg, and coat with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat until hot.
- Fry the fillets for 3-4 minutes per side until golden brown and cooked through.
- Drain the fried fillets on paper towels.
- Serve warm with lemon wedges and garnish with extra parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. For reheating, pop them in the oven at 350°F for about 10 minutes.
