Description

A delightful frittata packed with fresh spinach, grape tomatoes, and feta, perfect for breakfast or brunch.


Ingredients

Scale
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp cooking oil
  • 1 yellow onion (diced)
  • 2 cups fresh spinach (about 4 oz.)
  • 1 pint grape tomatoes
  • 1/4 cup crumbled feta

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the eggs, milk, salt, and pepper.
  3. Dice the yellow onion finely.
  4. Sauté the onion in a skillet until soft and translucent.
  5. Prepare the spinach and tomatoes.
  6. Combine the spinach and tomatoes with the sautéed onions.
  7. Pour the egg mixture over the vegetables.
  8. Cook on the stove until the edges begin to set.
  9. Bake for about 15 minutes or until set in the center.
  10. Rest for 5 minutes, then slice and serve.

Notes

Pairs well with a light green salad or crispy toast. Leftovers can be stored in the fridge for up to 3 days.
