Ingredients

- 6 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp cooking oil
- 1 yellow onion (diced)
- 2 cups fresh spinach (about 4 oz.)
- 1 pint grape tomatoes
- 1/4 cup crumbled feta
Instructions
- Preheat the oven to 350°F.
- Whisk together the eggs, milk, salt, and pepper.
- Dice the yellow onion finely.
- Sauté the onion in a skillet until soft and translucent.
- Prepare the spinach and tomatoes.
- Combine the spinach and tomatoes with the sautéed onions.
- Pour the egg mixture over the vegetables.
- Cook on the stove until the edges begin to set.
- Bake for about 15 minutes or until set in the center.
- Rest for 5 minutes, then slice and serve.
Notes
Pairs well with a light green salad or crispy toast. Leftovers can be stored in the fridge for up to 3 days.
