Description

A comforting roast chicken dish infused with the vibrant flavors of lemon and garlic, perfect for family gatherings.

Ingredients

Scale
  • 1 whole chicken
  • 45 medium potatoes, cut into chunks
  • 4 cloves of garlic, minced
  • 2 lemons, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl.
  3. Rub the chicken with the mixture, ensuring it is well coated.
  4. Place the chicken in a roasting pan and surround it with the potato chunks.
  5. Drizzle any remaining marinade over the potatoes.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Allow the chicken to rest for 10 minutes before carving.
  8. Garnish with fresh parsley, serve, and enjoy!

Notes

For crispy skin, dry the chicken thoroughly before marinating. Marinate for a few hours or overnight for more flavor.
