- 4 cloves of garlic, minced
- 2 lemons, juiced

Instructions
- Preheat your oven to 400°F (200°C).
- Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large bowl.
- Rub the chicken with the mixture, ensuring it is well coated.
- Place the chicken in a roasting pan and surround it with the potato chunks.
- Drizzle any remaining marinade over the potatoes.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Allow the chicken to rest for 10 minutes before carving.
- Garnish with fresh parsley, serve, and enjoy!
