Description

A delightful leg of lamb roasted with herbs, served with a juicy garlic jus, perfect for Easter celebrations.


Ingredients

Scale
  • 1 leg of lamb (about 56 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup beef or chicken broth
  • 1 cup red wine (optional)
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and pepper.
  3. Rub the herb mixture all over the leg of lamb.
  4. Place the lamb in a roasting pan and pour the broth and wine (if using) around it.
  5. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C).
  6. Remove the lamb from the oven and let it rest for at least 15 minutes before slicing.
  7. For the jus, strain the pan drippings into a saucepan, bring to a simmer, and add lemon juice.
  8. Serve the sliced lamb with the garlic jus drizzled on top.

Notes

Use a meat thermometer for perfect doneness and let the meat rest for better juiciness.
