Description
A delightful leg of lamb roasted with herbs, served with a juicy garlic jus, perfect for Easter celebrations.
Ingredients

- 1 leg of lamb (about 5–6 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup beef or chicken broth
- 1 cup red wine (optional)
- Juice of 1 lemon
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and pepper.
- Rub the herb mixture all over the leg of lamb.
- Place the lamb in a roasting pan and pour the broth and wine (if using) around it.
- Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C).
- Remove the lamb from the oven and let it rest for at least 15 minutes before slicing.
- For the jus, strain the pan drippings into a saucepan, bring to a simmer, and add lemon juice.
- Serve the sliced lamb with the garlic jus drizzled on top.
Notes
Use a meat thermometer for perfect doneness and let the meat rest for better juiciness.
