- 1 whole turkey (12–14 pounds)
- 1/4 cup olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage, chopped
- 1 lemon, quartered
- 1 onion, quartered
- 4 cloves garlic, smashed
Instructions
- Preheat your oven to 325°F (165°C).
- In a small bowl, combine the olive oil, salt, black pepper, rosemary, thyme, and sage to create a herb mixture.
- Pat the turkey dry with paper towels.
- Rub the herb mixture all over the turkey, ensuring to get under the skin.
- Stuff the turkey cavity with quartered lemon, onion, and garlic.
- Place the turkey in a roasting pan and roast for approximately 13 to 15 minutes per pound, or until the internal temperature reaches 165°F (75°C).
- Baste the turkey occasionally with pan juices.
- Let the turkey rest for at least 20 minutes before carving.
Notes
Brining the turkey before cooking enhances moisture and flavor. Using a meat thermometer helps ensure the turkey is cooked without drying out.
