Description

Ingredients

  • 1 whole turkey (1214 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 lemon, quartered
  • 1 onion, quartered
  • 4 cloves garlic, smashed

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a small bowl, combine the olive oil, salt, black pepper, rosemary, thyme, and sage to create a herb mixture.
  3. Pat the turkey dry with paper towels.
  4. Rub the herb mixture all over the turkey, ensuring to get under the skin.
  5. Stuff the turkey cavity with quartered lemon, onion, and garlic.
  6. Place the turkey in a roasting pan and roast for approximately 13 to 15 minutes per pound, or until the internal temperature reaches 165°F (75°C).
  7. Baste the turkey occasionally with pan juices.
  8. Let the turkey rest for at least 20 minutes before carving.

Notes

Brining the turkey before cooking enhances moisture and flavor. Using a meat thermometer helps ensure the turkey is cooked without drying out.
