Description

A comforting and hearty lentil stew packed with flavor, perfect for busy weeknights or cozy weekends.


Ingredients

Scale
  • 1 cup lentils
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and sauté the onion, garlic, carrot, and celery until softened.
  2. Add the lentils, diced tomatoes, vegetable broth, basil, salt, and pepper.
  3. Close the lid and set to manual pressure for 15 minutes.
  4. Once done, allow for natural release.
  5. Stir well and serve warm.

Notes

Leftover stew can be stored in an airtight container in the refrigerator for up to 5 days. It can also be frozen in individual portions for up to 3 months.
