Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • 1 cup apricots, chopped
  • 2 cups chicken or beef broth
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil over medium heat. Add the chopped onions and minced garlic, then sauté until the onions become translucent.
  2. Add the lamb chunks, browning them on all sides to lock in flavors.
  3. Stir in the ground spices, salt, and pepper; cook for a minute until aromatic.
  4. Add the chopped apricots and broth, stirring to mix the flavors.
  5. Bring the mixture to a boil, then reduce the heat to low and cover.
  6. Let simmer for 90 minutes to 2 hours, or until the lamb is tender and easily shredded.
  7. Serve garnished with fresh cilantro for a refreshing touch.
