- 1 cup apricots, chopped
- 2 cups chicken or beef broth

Instructions
- Heat the olive oil over medium heat. Add the chopped onions and minced garlic, then sauté until the onions become translucent.
- Add the lamb chunks, browning them on all sides to lock in flavors.

- Add the chopped apricots and broth, stirring to mix the flavors.
- Bring the mixture to a boil, then reduce the heat to low and cover.
- Let simmer for 90 minutes to 2 hours, or until the lamb is tender and easily shredded.
