Description

Delightful mini strawberry cheesecake cups that are simple to make and delicious to eat, perfect for any occasion.


Ingredients

  • 1 cup Graham cracker crumbs
  • 1/4 cup Unsalted butter, melted
  • 2 tablespoons Granulated sugar
  • 8 ounces Cream cheese, softened
  • 1/2 cup Powdered sugar
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh strawberries, sliced
  • 1 tablespoon Lemon juice
  • 1 tablespoon Honey or maple syrup (optional)

Instructions

  1. Prepare the Graham cracker crust by combining crumbs, melted butter, and sugar.
  2. Assemble the crust in cups, packing it down evenly.
  3. Mix the creamy cheesecake filling by beating cream cheese, powdered sugar, heavy cream, and vanilla.
  4. Scoop the cheesecake filling into the cups over the crust.
  5. Prepare the strawberry topping by marinating sliced strawberries with lemon juice and optional honey.
  6. Top the cheesecake cups with marinated strawberries.
  7. Chill in the fridge for at least 2 hours before serving.

Notes

Room temperature cream cheese prevents lumps. These can be made a day in advance to enhance the flavors.
