Ingredients

Scale
  • 4 cod fillets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted olives, sliced

  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add garlic and sauté for 1 minute until fragrant.
  4. Add cherry tomatoes and olives, cooking for another 3-4 minutes until the tomatoes start to soften.
  5. Season the cod fillets with salt, pepper, and oregano, then place them in the skillet on top of the tomato mixture.
  6. Transfer the skillet to the oven and bake for 12-15 minutes or until the cod is cooked through and flakes easily with a fork.
