- 8 oz noodles (e.g., spaghetti or soba)
- 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli, snap peas)
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame seeds
- 2 green onions, chopped
Instructions
- Cook the noodles according to package instructions. Once done, drain and rinse them with cold water to stop the cooking process.
- In a large pan, heat the sesame oil over medium heat. Add the mixed vegetables and stir-fry for about 5 minutes until they are tender yet crisp.
- In a small bowl, whisk together the soy sauce, rice vinegar, and honey (or maple syrup) until well combined.
- Add the cooked noodles to the pan with the sautéed vegetables, then pour the sauce over them. Toss everything together until well combined and heated through.
- Sprinkle with sesame seeds and chopped green onions before serving. Enjoy the colorful and vibrant dish!
