Description

A comforting and satisfying dish combining chicken, rice, and colorful veggies with savory soy sauce and sesame oil.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pan or wok over medium heat until it shimmers.
  2. Add mixed vegetables and cook until tender.
  3. Push vegetables to one side and scramble the beaten eggs until cooked through.
  4. Add cooked chicken and rice, tossing together to coat with flavors.
  5. Pour in soy sauce and season with salt and pepper, stir-frying for 3-5 minutes.
  6. Garnish with sliced green onions before serving.

Notes

Use day-old rice for the best texture. Fresh rice can be too moist and clump together.
