- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 3 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pan or wok over medium heat until it shimmers.
- Add mixed vegetables and cook until tender.
- Push vegetables to one side and scramble the beaten eggs until cooked through.
- Add cooked chicken and rice, tossing together to coat with flavors.
- Pour in soy sauce and season with salt and pepper, stir-frying for 3-5 minutes.
- Garnish with sliced green onions before serving.
Notes
Use day-old rice for the best texture. Fresh rice can be too moist and clump together.
