Ingredients

- 1 cup brown or green lentils, rinsed
- 1 bunch Swiss chard, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 4 cups vegetable broth or water
- Juice of 1 lemon
Instructions
- Combine the lentils, chopped Swiss chard, onion, garlic, carrot, olive oil, cumin, coriander, salt, and pepper in the slow cooker.
- Pour in the vegetable broth or water and stir to ensure the lentils are submerged.
- Cook on low for 6-8 hours or on high for 3-4 hours until the lentils are tender.
- Add in the lemon juice and adjust seasoning if necessary.
- Serve warm, enjoying with crusty bread or over rice.
Notes
Rinse lentils before cooking to remove debris. Add more vegetables for extra nutrition or spices for a kick.
