Description

A comforting and nutritious lentil stew featuring Swiss chard and aromatic spices, perfect for busy weeknights.


Ingredients

  • 1 cup brown or green lentils, rinsed
  • 1 bunch Swiss chard, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 4 cups vegetable broth or water
  • Juice of 1 lemon

Instructions

  1. Combine the lentils, chopped Swiss chard, onion, garlic, carrot, olive oil, cumin, coriander, salt, and pepper in the slow cooker.
  2. Pour in the vegetable broth or water and stir to ensure the lentils are submerged.
  3. Cook on low for 6-8 hours or on high for 3-4 hours until the lentils are tender.
  4. Add in the lemon juice and adjust seasoning if necessary.
  5. Serve warm, enjoying with crusty bread or over rice.

Notes

Rinse lentils before cooking to remove debris. Add more vegetables for extra nutrition or spices for a kick.
