Ingredients

  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil over medium heat in a skillet until it shimmers.
  2. Add the sliced onion and bell pepper, sautéing until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for about one minute until fragrant.
  4. Sprinkle Cajun seasoning over the shrimp and mix well to coat them.
  5. Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
  6. Stir in the diced tomatoes and allow them to warm through for another couple of minutes.
  7. Taste and adjust seasoning with salt and pepper as necessary.

Notes
