- 1 cup diced tomatoes
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil over medium heat in a skillet until it shimmers.
- Add the sliced onion and bell pepper, sautéing until softened, about 5 minutes.
- Stir in the minced garlic and cook for about one minute until fragrant.
- Sprinkle Cajun seasoning over the shrimp and mix well to coat them.
- Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
- Stir in the diced tomatoes and allow them to warm through for another couple of minutes.
- Taste and adjust seasoning with salt and pepper as necessary.
- Garnish with fresh parsley before serving.
Notes
