Description

A warm, cheesy casserole combining chicken, spinach, and melty cheese for a comforting meal that brings the family together.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream of chicken soup, milk, garlic powder, salt, and pepper. Whisk until smooth.
  3. In a baking dish, arrange the chicken breasts evenly.
  4. Pour the creamy mixture over the chicken breasts to cover them completely.
  5. Top with chopped spinach and sprinkle shredded cheese on top.
  6. If desired, add breadcrumbs for a crunchy topping.
  7. Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  8. Let cool for a few minutes before serving.

Notes

Feel free to mix in other veggies, or use different cheeses. Leftover rotisserie chicken can be used for faster prep.
