Ingredients

  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute.
  3. Add the lentils, vegetable broth, thyme, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat and let it simmer for 25-30 minutes until the lentils are tender.
  5. Remove the pot from heat and stir in the fresh lemon juice.
  6. Adjust the seasoning if necessary, and serve the soup warm.

Notes
