- 2 carrots, diced
- 2 celery stalks, diced

Instructions
- In a pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery, sautéing until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the lentils, vegetable broth, thyme, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat and let it simmer for 25-30 minutes until the lentils are tender.
- Remove the pot from heat and stir in the fresh lemon juice.
- Adjust the seasoning if necessary, and serve the soup warm.
Notes
