Description

Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the ricotta cheese and softened butter until smooth.
  3. Add in the granulated sugar, egg, vanilla extract, and almond extract, mixing until well combined.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the ricotta mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
