Description

A vibrant bowl of French-Style Potato and Green Bean Salad, combining earthy baby potatoes and crisp green beans with a zesty Dijon vinaigrette.

Ingredients

Scale
  • 2 cups baby potatoes
  • 2 cups green beans
  • 3 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill) for garnish

Instructions

  1. Boil the baby potatoes in a pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. Blanch the green beans by boiling them for 3-4 minutes until bright green and tender-crisp. Drain and rinse under cold water.
  3. Prepare the vinaigrette by whisking together Dijon mustard, olive oil, white wine vinegar, and seasoning with salt and pepper.
  4. Combine the cooled potatoes (cut into bite-sized pieces) with the vinaigrette and green beans.
  5. Toss gently to coat the vegetables with the vinaigrette.
  6. Garnish the salad with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Experiment with different herbs for varied flavors.
