- 200g beef, thinly sliced
- 1 cup pickled mustard greens, chopped
- 1 cup cheese, grated (such as cheddar or mozzarella)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Add the sliced beef and cook until browned, about 3-4 minutes.
- Push the beef to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
- Add the cooked rice to the skillet, mixing in the beef and scrambled eggs.
- Stir in the soy sauce, chopped pickled mustard greens, and the cheese.
- Cook for an additional 2-3 minutes until heated through and cheese is melted.
- Season with salt and pepper to taste, and garnish with green onions before serving.
Notes
Use day-old rice for the best texture. Cheese is optional but recommended for added creaminess.
