Description

Deliciously moist Frosted Zucchini Bars that combine warmth from cinnamon with sweet creamy frosting, perfect for family gatherings or a quiet coffee break.


Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup walnuts or pecans (optional)
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, and vegetable oil. Stir in the eggs and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. If you’re using nuts, fold them in gently.
  5. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. While the bars are cooling, make the frosting by beating together the cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
  7. Once the bars have cooled, spread the cream cheese frosting evenly on top. Cut into bars and enjoy!

Notes

These bars are best stored in an airtight container in the fridge for up to a week. They taste even better after a day or two!
