Description

A delightful dish featuring tender lobster and creamy cheese stuffed into jumbo pasta shells, all enveloped in a rich garlic butter sauce.


Ingredients

  • 2 cups baby spinach (optional)
  • 2 small lobster tails (3 to 4 ounces each)
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon lemon zest
  • 2 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • Cayenne pepper, to taste
  • 1/4 teaspoon smoked paprika
  • Reserved lobster shells
  • 1 tablespoon butter
  • 1 teaspoon tomato paste
  • 1 cup heavy cream
  • 1 splash water
  • 1/4 teaspoon salt
  • 1 pinch cayenne pepper
  • 8 large pasta shells
  • 1/3 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon olive oil (optional)
  • 1 pinch cayenne pepper (optional)
  • 1 pinch chopped fresh parsley (optional)

Instructions

  1. Wilt the spinach (optional).
  2. Prepare the lobster meat.
  3. Make the filling.
  4. Sauté the lobster shells.
  5. Create the sauce.
  6. Strain the sauce.
  7. Prepare the pasta shells.
  8. Preheat the oven.
  9. Stuff the shells.
  10. Assemble in baking dish.
  11. Add cheese and sauce.
  12. Bake to perfection.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven for best results.
