Instructions
- Preheat the oven to 425°F (220°C).
- Wash and slice the potatoes into thin rounds (about 1/8-inch thick).
- Toss the potato slices with olive oil, garlic powder, salt, and pepper in a large bowl.
- Spread the potato slices in a single layer on a baking sheet.
- Bake for 25-30 minutes, flipping halfway through.
- Remove from oven and sprinkle with Parmesan cheese.
- Return to the oven for an additional 5-7 minutes until cheese is melted.
- Garnish with chopped parsley before serving.
Notes
For extra crispy nachos, soak sliced potatoes in cold water for 30 minutes before baking.
