Description
A warm and tangy German Potato Salad featuring tender potatoes, crispy bacon, and a delicious apple cider vinegar dressing.

- 2 pounds potatoes
- 1 cup diced bacon
- 1 cup diced onion
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1 tablespoon sugar
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Boil the potatoes until tender, about 15-20 minutes. Drain and let cool slightly before cutting into wedges.
- Cook the diced bacon in a skillet over medium heat until it’s crispy. Remove and set on paper towels to drain, leaving the drippings in the skillet.
- Sauté the diced onion in the skillet over medium heat until translucent and fragrant, about 3-4 minutes.
- Add the apple cider vinegar, water, sugar, salt, and pepper to the skillet. Stir and heat through to meld flavors.
- Combine the potato wedges, crispy bacon, and warm dressing in a large bowl. Toss gently to coat.
- Garnish with fresh parsley if desired. Serve warm or at room temperature.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently or enjoy cold.
