Description

A warm and tangy German Potato Salad featuring tender potatoes, crispy bacon, and a delicious apple cider vinegar dressing.


Ingredients

  • 2 pounds potatoes
  • 1 cup diced bacon
  • 1 cup diced onion
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Boil the potatoes until tender, about 15-20 minutes. Drain and let cool slightly before cutting into wedges.
  2. Cook the diced bacon in a skillet over medium heat until it’s crispy. Remove and set on paper towels to drain, leaving the drippings in the skillet.
  3. Sauté the diced onion in the skillet over medium heat until translucent and fragrant, about 3-4 minutes.
  4. Add the apple cider vinegar, water, sugar, salt, and pepper to the skillet. Stir and heat through to meld flavors.
  5. Combine the potato wedges, crispy bacon, and warm dressing in a large bowl. Toss gently to coat.
  6. Garnish with fresh parsley if desired. Serve warm or at room temperature.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently or enjoy cold.
