- 1 cup granulated sugar
- 3 large eggs

- 1/2 cup freshly squeezed orange juice
- Zest of 1 orange
- 1 tsp baking powder

- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together the almond flour, gluten-free flour, granulated sugar, baking powder, and salt.
- In another bowl, beat the eggs until frothy, then add the olive oil, orange juice, orange zest, and vanilla extract.
- Pour the egg mixture into the bowl with the dry ingredients and gently mix until combined.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
