Description

Gnaouia is a flavorful Moroccan veggie-forward stew, rich with spices and fresh vegetables, perfect for comfort and connection.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) crushed tomatoes
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it’s soft and translucent, about 5 minutes. Stir in the minced garlic and continue to cook for an additional minute, until fragrant.
  2. Introduce the diced zucchini and bell pepper to the pot, stirring well. Allow these to cook for about 5 minutes until they start to soften.
  3. Sprinkle in the cumin, smoked paprika, and ground coriander. Stir everything together, letting the spices toast for a minute.
  4. Pour in the canned chickpeas and crushed tomatoes, along with salt and pepper to taste. Stir until well combined.
  5. Bring the mixture to a gentle simmer. Reduce the heat to low and cover the pot. Let it simmer for about 20 minutes, stirring occasionally.
  6. Once cooked, remove from heat and garnish with freshly chopped parsley. Serve hot.

Notes

Gnaouia can be served with warm couscous or crusty bread. It also stores well in the fridge for up to 4 days or can be frozen for up to 3 months.
