Description
A soft and moist cinnamon coffee cake that brings family together with its delicious aroma and flavor.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/2 cup chopped nuts (optional)
- 1/2 cup powdered sugar (for glaze, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan to ensure your cake won’t stick.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
- Combine the flour, baking powder, salt, and ground cinnamon in another bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, until just combined.
- Mix together the brown sugar, chopped nuts (if using), and a teaspoon of cinnamon in a separate bowl.
- Pour half of the batter into the prepared pan, sprinkle with half of the cinnamon sugar mixture, then add the remaining batter and top with the rest of the cinnamon sugar.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Cool for a few minutes before serving, and drizzle with powdered sugar glaze if desired.
Notes
For a deeper cinnamon flavor, add an extra 1/2 teaspoon of cinnamon to your batter. Store leftovers in an airtight container for up to three days or freeze for two months.
