- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh oregano, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil (for cooking)
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped oregano, salt, black pepper, egg, and crumbled feta cheese.
- Mix until just combined, being careful not to overmix.
- Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
- Heat the olive oil in a skillet over medium heat until shimmering.
- Add the meatballs in batches to the skillet and cook until browned on all sides, approximately 10-12 minutes.
- Transfer the browned meatballs to a baking dish and bake in a preheated oven at 400°F for 15-20 minutes, or until cooked through.
- Serve warm, accompanied by tzatziki sauce for dipping.
Notes
These meatballs can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Experiment with different herbs or add chopped vegetables for extra nutrition.
