Description

A vibrant wrap featuring zesty lemon chicken, fresh veggies, and creamy tzatziki all wrapped in a whole-wheat pita.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 whole-wheat pita wraps
  • 1 cup fresh spinach or lettuce
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • Tzatziki sauce for serving

Instructions

  1. In a bowl, mix together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Immerse chicken breasts in the marinade for at least 30 minutes.
  3. Heat grill or skillet over medium heat; grill chicken for 6-7 minutes per side until cooked through.
  4. After cooking, let chicken rest for a few minutes, then slice into strips.
  5. Warm pita wraps slightly for pliability.
  6. Layer fresh spinach, diced cucumber, tomatoes, and chicken strips in each pita.
  7. Drizzle with tzatziki sauce, wrap tightly, and serve.
