Description

A refreshing and vibrant blend of fresh vegetables, Kalamata olives, and feta cheese, dressed with a zesty olive oil and lemon dressing.


Ingredients

Scale
  • 2 Cucumbers
  • 3 Tomatoes
  • 1 Red onion
  • 1 cup Kalamata olives
  • 1 cup Feta cheese, crumbled
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Chop the cucumbers, tomatoes, and red onion into bite-sized pieces.
  2. In a large salad bowl, combine the chopped vegetables with Kalamata olives and crumbled feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately, optionally garnished with extra feta or olives.

Notes

Best enjoyed fresh. If storing leftovers, keep dressing separate.
