Description

Juicy meatballs blended with bright lemon and herbs, served over fluffy rice, creating a comforting and satisfying meal.


Ingredients

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, basil, salt, and pepper in a large bowl.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place them on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until cooked through and golden brown.
  6. Rinse the rice under cold water until the water runs clear.
  7. Bring the chicken broth to a boil in a saucepan, then add the rinsed rice and lemon zest.
  8. Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
  9. Fluff the rice with a fork and stir in the lemon juice and chopped parsley.
  10. Serve the turkey meatballs over the lemon herb rice and enjoy!

Notes

For added moisture, mix in a tablespoon of olive oil when blending the meatball ingredients.
