- 1 pound ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup rice
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, basil, salt, and pepper in a large bowl.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until cooked through and golden brown.
- Rinse the rice under cold water until the water runs clear.
- Bring the chicken broth to a boil in a saucepan, then add the rinsed rice and lemon zest.
- Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
- Fluff the rice with a fork and stir in the lemon juice and chopped parsley.
- Serve the turkey meatballs over the lemon herb rice and enjoy!
Notes
For added moisture, mix in a tablespoon of olive oil when blending the meatball ingredients.
