Description
A delightful grilled bagel topped with melty Swiss cheese and sautéed zucchini, perfect for a quick lunch or snack.

- 1 bagel, sliced in half
- 4 slices of Swiss cheese
- 1 small zucchini or yellow squash, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Butter (for grilling)
Instructions
- Heat the skillet over medium heat and add the olive oil.
- Add the sliced squash, seasoning with salt and pepper, and sauté until tender, approximately 3-4 minutes.
- Butter the outside of each bagel half.
- Grill the buttered bagel halves in the skillet until golden brown, about 2-3 minutes on each side.
- Layer Swiss cheese on the inside of each toasted bagel half, followed by the sautéed squash.
- Close the bagel and grill for an additional 2 minutes until the cheese is melted.
- Serve warm, optionally with a side salad or fresh fruit.
Notes
For added flavor, you can experiment with different vegetables or cheeses. Store any leftovers wrapped tightly in the fridge for up to 2 days.
