Description

A delightful grilled bagel topped with melty Swiss cheese and sautéed zucchini, perfect for a quick lunch or snack.


Ingredients

Scale
  • 1 bagel, sliced in half
  • 4 slices of Swiss cheese
  • 1 small zucchini or yellow squash, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Butter (for grilling)

Instructions

  1. Heat the skillet over medium heat and add the olive oil.
  2. Add the sliced squash, seasoning with salt and pepper, and sauté until tender, approximately 3-4 minutes.
  3. Butter the outside of each bagel half.
  4. Grill the buttered bagel halves in the skillet until golden brown, about 2-3 minutes on each side.
  5. Layer Swiss cheese on the inside of each toasted bagel half, followed by the sautéed squash.
  6. Close the bagel and grill for an additional 2 minutes until the cheese is melted.
  7. Serve warm, optionally with a side salad or fresh fruit.

Notes

For added flavor, you can experiment with different vegetables or cheeses. Store any leftovers wrapped tightly in the fridge for up to 2 days.
