A comforting and hearty stew made with tender beef, rich Guinness, and wholesome barley, perfect for chilly days.
Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup pearl barley
- 4 cups beef broth
- 2 cups Guinness beer
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef and brown it on all sides until it develops a rich, golden crust.
- Remove the beef and set aside. In the same pot, add the onion, carrots, celery, and garlic. Cook until soft, about 5 minutes.
- Stir in the pearl barley, beef broth, Guinness, bay leaves, and thyme.
- Return the beef to the pot and season generously with salt and pepper.
- Bring to a gentle boil, then reduce the heat. Cover and let it simmer for 1.5 to 2 hours.
- Remove the bay leaves, and add chopped parsley before serving.
Notes
Leftover stew can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in individual portions for up to 3 months.
