Description

A comforting and hearty stew made with tender beef, rich Guinness, and wholesome barley, perfect for chilly days.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup pearl barley
  • 4 cups beef broth
  • 2 cups Guinness beer
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef and brown it on all sides until it develops a rich, golden crust.
  2. Remove the beef and set aside. In the same pot, add the onion, carrots, celery, and garlic. Cook until soft, about 5 minutes.
  3. Stir in the pearl barley, beef broth, Guinness, bay leaves, and thyme.
  4. Return the beef to the pot and season generously with salt and pepper.
  5. Bring to a gentle boil, then reduce the heat. Cover and let it simmer for 1.5 to 2 hours.
  6. Remove the bay leaves, and add chopped parsley before serving.

Notes

Leftover stew can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in individual portions for up to 3 months.
