Description

Delicious and fluffy egg bites packed with ham and melted cheese, perfect for brunch or meal prep.


Ingredients

Scale
  • 12 large eggs
  • 1 cup cooked ham, diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk or cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: Fresh herbs (chives, parsley, or green onions)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it lightly or using silicone muffin cups.
  2. Whisk all 12 eggs in a large mixing bowl until fully combined.
  3. Add the milk or cream to the egg mixture.
  4. Season the mixture with salt and freshly ground black pepper.
  5. Fold in the diced ham.
  6. Add the shredded cheese and mix well.
  7. Pour the egg mixture into the prepared muffin tin, filling each mold about ¾ full.
  8. Bake for 20 minutes, or until golden and a toothpick comes out clean.
  9. Cool for 5 minutes before removing from the tin.
  10. Garnish with fresh herbs if desired and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months.
