- 1 cup grated zucchini
- 1 cup almond flour
- 1/2 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the grated zucchini, almond flour, cocoa powder, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.
- Stir in the baking soda and salt.
- Fold in the dark chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
- Allow to cool before slicing and enjoying.
Notes
Make sure to squeeze out excess moisture from the grated zucchini. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
