Description

A deliciously moist and rich zucchini bread that cleverly hides healthy veggies while delivering a chocolatey flavor.


Ingredients

  • 1 cup grated zucchini
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the grated zucchini, almond flour, cocoa powder, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.
  3. Stir in the baking soda and salt.
  4. Fold in the dark chocolate chips.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before slicing and enjoying.

Notes

Make sure to squeeze out excess moisture from the grated zucchini. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
