Description

Ingredients

  • 2 ripe bananas (mashed)
  • 1.5 cups old-fashioned rolled oats (divided)
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.25 cup chocolate chips or raisins (optional)
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas until smooth.
  3. Add rolled oats, ground cinnamon, vanilla extract, and a pinch of salt to the bananas; stir until well combined.
  4. Fold in chocolate chips or raisins if desired.
  5. Scoop spoonfuls of the mixture onto a parchment-lined baking sheet, spaced about two inches apart.
  6. Bake for 12-15 minutes, or until lightly golden around the edges.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra sweetness, consider adding honey or maple syrup. Store cookies in an airtight container for up to 3 days at room temperature or one week in the refrigerator.
