Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas until smooth.
- Add rolled oats, ground cinnamon, vanilla extract, and a pinch of salt to the bananas; stir until well combined.
- Fold in chocolate chips or raisins if desired.
- Scoop spoonfuls of the mixture onto a parchment-lined baking sheet, spaced about two inches apart.
- Bake for 12-15 minutes, or until lightly golden around the edges.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For extra sweetness, consider adding honey or maple syrup. Store cookies in an airtight container for up to 3 days at room temperature or one week in the refrigerator.
