Description

A delightful side dish featuring tender carrots and green beans roasted in a sweet honey glaze, perfect for family gatherings and holiday feasts.

Ingredients

Scale
  • 1 pound fresh carrots
  • 1 pound fresh green beans
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional: Chopped fresh parsley or toasted sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and trim the green beans, snapping off the stem ends. If using whole carrots, peel and cut into roughly 1-inch thick diagonal pieces.
  2. Whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper in a small bowl until well combined.
  3. Transfer the prepared carrots and green beans to a large bowl. Pour the honey glaze over the vegetables and toss gently to coat.
  4. Spread the glazed vegetables in a single layer on a large baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, checking for doneness around the 20-minute mark.
  6. Broil the vegetables for the last 1-2 minutes for extra caramelization, watching closely to prevent burning.
  7. Remove from the oven and let rest for a minute or two before serving. Garnish if desired.

Notes

Use even-sized pieces of vegetables for consistent roasting. Store leftovers in an airtight container for up to 3 days.
