Instructions
- Preheat your oven to 400°F (200°C). Wash and trim the green beans, snapping off the stem ends. If using whole carrots, peel and cut into roughly 1-inch thick diagonal pieces.
- Whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper in a small bowl until well combined.
- Transfer the prepared carrots and green beans to a large bowl. Pour the honey glaze over the vegetables and toss gently to coat.
- Spread the glazed vegetables in a single layer on a large baking sheet.
- Roast in the preheated oven for 20-25 minutes, checking for doneness around the 20-minute mark.
- Broil the vegetables for the last 1-2 minutes for extra caramelization, watching closely to prevent burning.
- Remove from the oven and let rest for a minute or two before serving. Garnish if desired.
Notes
Use even-sized pieces of vegetables for consistent roasting. Store leftovers in an airtight container for up to 3 days.
