Delightful muffins inspired by traditional Irish Soda Bread, fluffy and slightly sweet with hints of raisin or currant.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1 tablespoon sugar
- 1/4 cup raisins or currants (optional)
- 1/4 cup melted butter (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, salt, and sugar.
- Stir in the buttermilk until just combined, then gently fold in raisins or currants, if using.
- Divide the batter evenly among the muffin tin cups, filling each about three-quarters full.
- Bake for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Remove from the oven and brush the tops with melted butter, if desired. Let cool slightly before enjoying.
Notes
Ensure not to overmix the batter to keep muffins tender. Room temperature buttermilk works best.
