Description

  • 3 cups chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Cooked rice for serving
  • Chopped green onions and parsley for garnish

Instructions

  1. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the onion, bell pepper, and celery, and sauté until soft, about 5 minutes. Stir in the garlic and cook for another minute.
  2. Create the roux: Sprinkle the flour over the sautéed vegetables and cook for 2-3 minutes until it turns golden.
  3. Whisk in the broth: Gradually whisk in the chicken broth, then add the tomato paste, Cajun seasoning, salt, and pepper until smooth.
  4. Simmer the chicken: Add the diced chicken, stir to coat, and let simmer for 20-30 minutes until the chicken is cooked and the sauce thickens.
  5. Serve and garnish: Spoon the étouffée over rice and garnish with green onions and parsley.
