Description

Chewy and fruity mango cookies, perfect for gatherings or a cozy treat with tea.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 cup dried mango, chopped
  • 1/2 cup shredded coconut
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Combine the all-purpose flour, rolled oats, baking soda, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the chopped dried mango and shredded coconut.
  7. Scoop tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, or until golden at the edges.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container for up to a week. These cookies can be frozen for up to three months.
